Pecan-Crusted Chocolate Pie
2 cups pecan halves 1/3 cup sugar 1/4 cup (1/2 stick) butter, melted 2 tbsp caramel topping 1 1/2 cups heavy cream 2 cups (12 ounces) semisweet chocolate chips
Preheat oven to 350 deg, F. In a food processor or blender, finely chop 1 3/4 cups of the pecans with the sugar. Add butter and process until completely blended. Press into the bottom and up the sides of a 9-in. pie plate, forming a crust. Bake 20 to 25 min. or until browned. Remove from oven and allow to cool. Drizzle caramel topping over the crust. In a medium saucepan, heat cream over med. heat until almost boiling. Reduce heat to low and stir in chocolate chips. Continue cooking til chocolate melts and the mixture is smooth, whisking constant ly. Remove from heat and let cool to lukewarm. Pour into the pie crust and garnish with remaining 1/4 cut pecan halves. Chill at least 2 hours before serving 12-16 servings
