Chocolate Pie
1 baked pie shell
1/3 cup sifted flour
1 cup sugar
1/4 teaspoon salt
2 cups milk
3 egg yolks, slightly beaten
2 oz. unsweetened chocolate squares, melted
2 Tablespoons butter or margerine
1/2 teaspoon vanilla
Mix flour, sugar, and salt together. Mix in milk, egg yolks and
melted chocolate while cooking over low heat or in a double boiler.
Stir contantly until mixture thickens. Turn off heat. Add butter.
Beat gently until smooth. Stir in vanilla. Pour into pie shell.
Top with meringue or whipped cream after filling is cool.
